Pumpkins are spooktacularly packed full of micronutrients and fibre.  A Hallowe’en superfood.  The seeds are just as nutritious as the flesh.  They are rich in magnesium, potassium, zinc and iron.

Carrot and pumpkin soup is a big hit in our house.  Whizzed up in the blender the kids love it.  All you need is:

  • 2 small onions roughly chopped3-4 carrots peeled and gratedPumpkin peeled and chopped (same amount as the carrots)Chicken stock, enough to just cover all the veggies in the pot.Salt and pepper to taste (try adding chilli or cumin if you want a bit more flavour)Cook until veggies are soft then whizz in blender until smooth
  • Try roasting the seeds.  (We added chilli powder and cumin to ours for flavour).  Sprinkled over the soup they were ghoulishly good.
