Pumpkins are spooktacularly packed full of micronutrients and fibre. A Hallowe’en superfood. The seeds are just as nutritious as the flesh. They are rich in magnesium, potassium, zinc and iron.
Carrot and pumpkin soup is a big hit in our house. Whizzed up in the blender the kids love it. All you need is:
Try roasting the seeds. (We added chilli powder and cumin to ours for flavour). Sprinkled over the soup they were ghoulishly good.
