Lately I’ve been a bit fed up with our family dinners. Im not sure why, maybe it’s the change in season or the dark nights. Whatever the reason I’ve found myself staring in cupboards and in the freezer hoping for an interesting idea to jump out. It’s all too easy to get stuck in a rut with food.

My goal during this weeks food shop was to find something new to work with. These colourful squashes caught my eye. To be honest they’re not a veg I usually use but they were cheap so I thought I’d give them a go.

That’s the beauty of seasonal veg. When it’s in abundance the price goes down making it a perfect time to try a veg you wouldn’t normally pick.

Squashes are rich in fibre making them an ideal filler. I used chunky cubes of squash in a chicken casserole rather than potatoes. They also provide a good dose of vitamin C, a powerful antioxidant and an essential micronutrient for a good immune system.

So the next time your doing your food shop take a minute at the veg aisle. See what’s in season and what’s on offer…. give something new a go.
